THE ULTIMATE BLUEBERRY CRISP


This is the Mother of all Crisps!! Nope, it’s not Tasty Tuesday but there was no way I could not share my favorite new fruit dessert recipe of the sweet Summa! 

 I make a good Harvest Spice Peach Crisp and an apple one in the Fall but this Ultimate Blueberry Crisp had me so in love that I made this a couple times. I think the key was the instant tapioca and the hint of orange juice. The fam went crazy for this. I think yours might too. Warm from the oven will have them all hovering over the pan!

What you'll need

The Ultimate Blueberry Crisp
INGREDIENTS 
1½ cup flour
¾ cup brown sugar
1 stick cold butter, diced + 1/2 stick butter, melted 
½ tsp salt
6 cup blueberries
2 Tbsp instant tapioca
1 cup granulated sugar
¼ cup orange juice
1 tsp cinnamon


DIRECTIONS
1.     Preheat oven to 375°F.
2.     Combine flour, brown sugar, butter, and salt in a food processor. Pulse mixture into coarse crumbs.
3.     In a large mixing bowl, combine berries, tapioca, granulated sugar, orange juice, and cinnamon. Spoon into a large baking dish. Top with an even layer of crumbs. Even you melted butter over crumb mixture.
4.     Bake for about 40 minutes or until topping is golden brown and filling bubbles. Serve with ice cream, if desired.

SOOOO YUMMY!!! HOT, SWEET FRUIT with Crunchy Topping.....YES!!!

Amy Ann Happens to be one of my favorite fashion bloggers in the entire world!! She is a tall (she is 5’10”) glass of pure sunshine!! I think I have pretty much adored everything she has ever worn and her color palettes inspire! Amy Ann and her husband have been blessed with little Ivy Jean who is always styling just as sweetly as her mama. Was so tickled the week to see her in such a lovely Pineapple Print Dress. Amy Ann always sports the CUTEST statement shoes so you will LOVE this post on How to Style Them! We share a major love for kimonos snd This Kimono she styled is one of my all-time favorites! I thought she was perfect of this summer ice cream edition of Friday Favorites because her colors often remind me of sweet ice cream shop hues!! Adore this Jesus loving mama and style sensation!

2. ICE CREAM of Course
Here’s where the whole ice cream theme came in play some more. I do not generally buy store ice cream unless it’s for pie or Cobbler and I’m spoiled because we have one if the top ten ice cream joints in the country. My second favorite ice cream spot is the Dairy Maid we go to on our vacation. I indulged right and it gave Mr. Nine and I an idea. History Channel are you listening? We should travel the country and commentate on all the ice cream shops. Here’s the damper on our reality show, I’m ready for the camera, Mr. Nine, not so much. Good thought honey, we’ll just stick to our occasional scoops of goodness, lol.

I cannot even tell you how much I love this Minty Tank. It is actually from the pajamas section of Target but I threw it on for last Sunday’s Funday festivities. It is sooooo soft!! And I love the bright lemon yellow in it and it’s only 12.99! Look at the scalloped hem!

5. Misc. Fun
Speaking of Sunday Funday
Scenes from Sunday Fun Day! We had come back from vacation on Saturday but not wanting to end our family fun time, we headed to a friend’s Lake Home get together. Had a blast. Lots of boating, water volleyball, grub, cocktails, badminton, relaxing and chatting. 


I made my Blueberry Crunch Parfait to take and it was a huge hit. Recipe calls for strawberries but this is how I made it for the Bursting with Blueberries contest.

5 weeks from tonight and It’s Friday Night Light’s Baby! Our boy will be a Senior, uninjured and starting with the Team. These are their colors, it was under $25 and I’ve heard, even cuter in person. I won’t shove anymore #NSale down your throat this week so I’ll leave it here for now. LOL

Tiki Toss 
Such a cool story about the Tiki Toss game! When we were on vacation as I told you on Monday, The kids played this game at the distillery. They both made ringers and the waitress said she hadn’t seen anybody do that yet. Well, when we got home a birthday package was waiting for Mr. Nine from his little sweet sister. Guess what was inside? TIKI TOSS!! And she didn’t even know we’d been playing it. Perfect addition to the pool area!

BLUEBERRY PEACH CRUMBLE

Mmmm, blueberries, and peaches.... 2 of my favorite things to get at our local fruit stand in the Summer. I often make a fruit crisp with peaches called Harvest Spice Peach Crisp but never have I combined these two marvelous fruits together. The red haven peach crop is at it's peak here right now and something about a juicy peach makes me so happy.
Am I ever tickled I mixed these two fruits because the taste explosion was fantastic. With the brown sugary butter topping and a hint of salt; sooo good! Add a scoop of vanilla frozen yogurt or ice cream and you will be in Summer dessert heaven. 
I know my family was!! Me too!!

What You'll Need

BLUEBERRY PEACH CRUMBLE
INGREDIENTS:
1 1/2 cups blueberries
5 fresh peaches sliced + 1 (15oz) can peaches in their own juice
1 teaspoon fresh lemon juice
1/2 teaspoon vanilla extract
1/2 cup granulated sugar
1/4 cup all-purpose flour
For the crumble topping:
1/2 cup all-purpose flour
3/4 cup old-fashioned oats
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (1 stick) cold butter, diced + 2 Tablespoons melted butter

DIRECTIONS:

1. Preheat the oven to 350 degrees.
2. In a large bowl, combine blueberries, sliced peaches, lemon juice, vanilla extract, white sugar, and flour. Gently toss until fruit is well coated. Pour the fruit mixture into a 2qt. baking dish and let sit while you prepare the crumble topping.
3. For the crumble topping: in a large bowl, combine the flour, oatmeal, brown sugar, white sugar, salt, and cinnamon. Cut in the butter with a fork until the mixture resembles crumbles.
4. Pour the crumble mixture on top of the fruit mixture and spread evenly. Melt the 2 Tablespoons butter in a glass pyrex measuring in the microwave about 10 seconds and pour over crumble. Line a baking sheet with parchment paper and bake about 45 minutes, or until the crumble stars to brown and fruit juices are bubbly. Serve warm or cooled and with vanilla ice cream if desired.
