Mmmm, blueberries, and peaches.... 2 of my favorite things to get at our local fruit stand in the Summer. I often make a fruit crisp with peaches called Harvest Spice Peach Crisp but never have I combined these two marvelous fruits together. The red haven peach crop is at it's peak here right now and something about a juicy peach makes me so happy.
Am I ever tickled I mixed these two fruits because the taste explosion was fantastic. With the brown sugary butter topping and a hint of salt; sooo good! Add a scoop of vanilla frozen yogurt or ice cream and you will be in Summer dessert heaven.
What You'll Need
BLUEBERRY PEACH CRUMBLE
INGREDIENTS:
1 1/2 cups blueberries
5 fresh peaches sliced + 1 (15oz) can peaches in their own juice
1 teaspoon fresh lemon juice
1/2 teaspoon vanilla extract
1/2 cup granulated sugar
1/4 cup all-purpose flour

For the crumble topping:
1/2 cup all-purpose flour
3/4 cup old-fashioned oats
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (1 stick) cold butter, diced + 2 Tablespoons melted butter

1/2 cup (1 stick) cold butter, diced + 2 Tablespoons melted butter
DIRECTIONS:
1. Preheat the oven to 350 degrees.
2. In a large bowl, combine blueberries, sliced peaches, lemon juice, vanilla extract, white sugar, and flour. Gently toss until fruit is well coated. Pour the fruit mixture into a 2qt. baking dish and let sit while you prepare the crumble topping.
3. For the crumble topping: in a large bowl, combine the flour, oatmeal, brown sugar, white sugar, salt, and cinnamon. Cut in the butter with a fork until the mixture resembles crumbles.
4. Pour the crumble mixture on top of the fruit mixture and spread evenly. Melt the 2 Tablespoons butter in a glass pyrex measuring in the microwave about 10 seconds and pour over crumble. Line a baking sheet with parchment paper and bake about 45 minutes, or until the crumble stars to brown and fruit juices are bubbly. Serve warm or cooled and with vanilla ice cream if desired.

ReplyDeleteBlueberries and peaches are two of my favorite fruits, so this crumble looks to die for! I actually have a few peaches at home so I might have to make this. Of course, my husband is more of an apple fan and probably wouldn't eat this...meaning I would eat the entire thing HA!
