TEX MEX BREAKFAST ENCHILADAS


 I have made a couple yummy breakfast casseroles for you all here before. The Breakfast and Brunch Egg Bake and Cheesy Southwestern Breakfast Casserole. These are perfect for a brunch, holiday mornings, company or just because you love breakfast casseroles. However, I must say this is my FAVORITE! The Tex Mex style and bubbly cheese sauce made for a great mix of flavors! This would definitely be a company and family pleaser and made for suburb leftovers.

What you'll need for the enchiladas

What you'll need for the cheese sauce

TEX MEX BREAKFAST ENCHILADAS
Ingredients 
2 Tablespoons unsalted butter
3/4 cup red pepper, chopped
1/2 cup sweet onion, chopped
12 large eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
1 jar salsa verde
12 (6 inch) tortillas 
1 1/2 cups shredded Colby jack cheese
1 cup shredded Mexican blend cheese
Cheese Sauce (see below)
Toppings like cherry tomatoes, chopped parsley and cilantro 

Directions 
Preheat oven to 350°. In a large skillet, melt butter and sauté red pepper and onion until soft. Stir together the eggs, salt and pepper, add to skillet and scrambled until fluffy. Now assemble tortillas. Place 1-2 Tablespoons salsa verda on each tortilla, then add egg and some of the Mexican blend cheese. Roll up and place seam side down in a 9x13 greased baking pan. Prepare cheese sauce* and add over the top of tortillas. Top with the Colby jack cheese and bake 30 minutes until browned and bubbly. (I turned the broiler on and browned a little more for a pretty topping)

*Cheese Sauce Ingredients 
3 Tablespoons unsalted butter
1/4 cup all purpose flour 
2 cups milk
1 1/2 cups Mexican or Colby jack shredded cheese
1 (4.5 oz) can chopped green chilies
1/2 teaspoon salt

Cheese Sauce Directions
Melt butter in a heavy saucepan over medium, whisk in the flour until smooth.. Slowly add in milk, whisking constantly until thickened. Remove from heat and stir in cheese green chilies and salt until smooth. Pour immediately on top of the tortillas before baking.





COFFEE TALK


Happy Monday sweet friends. I wish we could skip everything else this Monday and I could sit down and have a cup of coffee, tea or hot chocolate with you all. I saw this on sweet Jenn's blog last week and thought it would be a fun way to chit chat about some stuff on my mind. Litter. I do not like litter. Did you know if you litter on the road in the state of Indiana, it's a $500 fine? But I admit sometimes I am wasteful. Thank goodness this was on sale for $2.49 cause Edy's ice cream can be expensive. My eyes about popped out of my head when I saw their Pumpkin Latte flavor. That night we had a later house showing so a bowl of ice cream with some walnuts thrown in it was my dinner, only to throw the rest out. NOT because I didn't love it but because no one else did and I knew I'd eat it all. 


Megyn Kelly. I don't talk bad about others too often but Megyn is so full of herself.  I do not like her and she took away the flow of the Today Show by kicking out Today's Take 3rd hour with Al Roker and crew. What was the Today Show thinking? Ratings are down 30%! Kelly made a joke about a super fan’s sexual orientation, which led actress Debra Messing to post on Instagram that she was “dismayed” by Kelly’s remarks and regretted going on her show. Two days later, Kelly offended Jane Fonda with an off-putting question about her refusal to talk about plastic surgery. (“We really want to talk about that right now?” Fonda huffed, seated next to her co-star Robert Redford.) and she cut off Tom Brokow; this just within her first two weeks on the air. No, No, NO, Please bring back Today's Take NBC, please!

Sweets or Alcohol? If you had to to pick your calorie consumption from sweets or alcohol, which would you chose? Sweets, for me, every time. My friend Suzy wrote a great post and why she chose to stop drinking. I can stop drinking but I can't stop sweets consumption! I get a tad bit of a taste every day and it brings me joy, more time on the stepper, buy JOY! We need joy in our lives! If you want a Reese's Mini Peanut Butter cup, have one or two, just not 10! I'm just saying don't deprive yourself! 


I will still take a little Champs with my chocolate and yeah Bailey's and Coffee with my Christmas Cookie, lol!

Christmas Shopping/Stocking Stuffers. So, where are you on the Holiday shopping front? I am not as far along as I usually am and we are scaling back this year but let me tell ya, I LOVE to shop for others, especially at Christmas. Mr. Nine and I have always kept our money separate and we have this deal for our nuclear family where I buy all the stocking stuffers for the boys and he buys most of the "regular" gifts. I have so much fun. I have a box for each son that fulls with stocking stuffers over the next couple months and I usually have more than the stocking holds so it all gets put in an extra gift bag. Target/Mug Obsession How about a mug about Target? This will make a great gift for my fellow Target loving fans. I literally went in last week for two curved shower rods and ended up with a cartful...you know this from my Things That Inevitably Happen at Target post. I will admit however, lately it's been hit or miss in the clothing department but I feel a resurge coming on at Target for the holiday's especially with the Hearth Line coming from Chip and Jo Jo.

Banana Clips. Who remembers these? These long banana shaped clips took my BIG 80's hair into a whole new realm in the 90's!! I sported this look at least 4 out of 7 days a week! And guess what? They still make them so take that stocking stuffer list for the ladies up a notch and bring back the banana clip trend, lol!
