I have not had Texas
Sheet Cake in forever, but I remembered that I love it! However, I wasn’t in
the mood for cake, so how bout some yummy little cookies and thus, these babies
were created! And what a keeper they are. You have the same deliciousness of Texas
Sheet Cake in a little frosted cookie form. And the frosting, oh the frosting!! Your loving recipients of these cookies might just swoon and so will you.
These puppies were literally gone in less than 2 days.
What you'll need
TEXAS SHEET CAKE COOKIES
INGREDIENTS
½ cup (1 stick) butter, softened
1/3 cup white sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking powder
½ teaspoon salt
1 1/3 cup all-purpose flour
½ cup semi-sweet chocolate chips. Melted
FROSTING
1/2 cup (1 stick) butter
2 Tablespoons Cocoa powder
3 Tablespoons Milk
1/2 teaspoon vanilla
2 1/2 cup powdered sugar
DIRECTIONS
Preheat oven to 350 degrees. Line a cookie sheet
with parchment paper and set aside. IN a large bowl, beat butter and sugar together
until fluffy. Add in egg and vanilla and beat again. Mix in the baking powder
and salt. Slowly mix in the flour. The dough will be think. In a microwave-safe
bowl (I use a Pyrex glass measuring cup, melt the chocolate chips at 30 second
intervals in the microwave until melted. Mix into the cookie dough until evenly
distributed. Drop dough by measured tablespoons onto baking sheet. Bake 7-8
minutes until they appear just set, DO NOT overbake. They will be very soft,
which is good. Transfer to wax paper or rack to cool. For the frosting, in a medium
saucepan, combine the butter, cocoa power, vanilla and milk over medium heat.
When whisked and melted, remove from heat and whisk in powdered sugar. Pour
frosting over cookies and allow frosting to set before serving or storing.

ReplyDeleteI would freeze them without the frosting. The fresh frosting is what makes them so good and I’m not sure how well it would freeze.
DeleteIt's a Wednesday, snow in day, here in Northern Virginia. Lucky I don't have all of the ingredients to make these now, or I would do so and them promptly eat them until I get sick. My Aunt Jane used to make Texas Sheet Cake for us when I was a kid - I am now nearly 70 and have never forgotten how delicious it was.
