All I wanted was something to go with crusty bread! I rarely eat bread with my meal but the crusty loaves were on sale at our local grocery store and I thought they would make great props for a food photo shoot and my husband would love it alongside a hearty dish.

Enter into my mind my love of beans! When I was a little girl, I absolutely hated beans and as an adult, I cannot get enough of them! Black beans, great Northern beans, chili beans, cannellini beans, beans beans beans, so much love for this nutrient packed goodness!

As you all know, I like to substitute ground turkey and turkey sausage wherever I can. A couple months ago for the first time, I trued this sweet Italian turkey sausage links and loved them. The Casings are so easy to take off and it cooks up so nice. I knew I wanted this dish to be hearty
yet easy and what resulted was a one skillet wonder without a lot of ingredients. And for the record, my husband said it was perfect with the crusty bread!

SWEET ITALIAN SAUSAGE & WHITE BEANS
INGREDIENTS

12 oz sweet Italian turkey sausage
1 Tablespoon olive oil
1/2 cup chopped red pepper
1/2 cup chopped onions
1 (14.5 oz) diced Italian Style tomatoes, undrained
1 (19 oz) can Cannellini Beans or other white beans
1 teaspoon dried oregano
1 teaspoon dried basil
DIRECTIONS
Remove
casings from sausage. Heat a large nonstick skillet coated with cooking spray
over medium-high heat. Add bell pepper, onion, and garlic; sauté 3 minutes. Add
sausage, and cook 8 minutes, or until browned, stirring to crumble. Stir in
oregano and remaining ingredients; reduce heat to medium-low. Cook 5 minutes or
until thoroughly heated. Garnish with some grated Parmesan cheese if desired.

Yum!! I can't say I was a kid who hated beans because I was eating chili at the age of 4 and loving it, haha! This looks right up my alley!
