CINNAMON BUN MINI OREO CHEESECAKES



From the first bite of a Cinnamon Bun Oreo a couple weeks ago, I immediately knew I needed to come up with a dessert to use these divine cookies in. I thought: cheesecake! I remembered the mini chocolate Oreo cheesecakes my sister-in-law made at Christmas and I knew cinnamon bun mini cheesecakes had to be created!! 


Probably a bad idea because they are addictive!! I even talked about them in my Friday Favorites and have since been able to find them in several more stores. Since I was experimenting, I just made a small batch consisting of 6 cheesecakes so you could double this recipe. The 6 are perfect for our family of five...one for each of us with an extra for ME!!! ;-) 

What you'll need


CINNAMON BUN MINI OREO CHEESECAKES
Ingredients
8 Cinnamon Bun Oreos
1 (8oz) brick cream cheese
1/4 cup sugar
1/4 cup light brown sugar
1/4 cup sour cream
1 egg
1 tsp. Vanilla
1/8 tsp. Cinnamon

Directions
Preheat the oven to 350 degrees. Line 6 muffin tin slots with a cupcake liner and pave 1 cinnamon Oreo in the bottom of each liner. Crush the other two Oreos to save fir garnish. Beat the cream cheese and sugars together. Add the sour cream, vanilla, cinnamon and egg and blend until smooth. Evenly spoon the cheesecake mixture in top of each Oreo. Drop the pan on the counter a couple times to get any bubbles out. Bake for 20 minutes until centers are set, cool and refrigerate for 3 hours. Garnish with cool whip,/redi whip, cinnamon and crushed Oreos if desired. *Note: if you do double the recipe to make 12, increase to bake time to 25-30 minutes to make sure the middle is set.

  6. I have been waiting for these! What a perfect treat and I love that it only makes 6. I couldn't trust myself with a bunch of them sitting around. Though that does leave a lot of Oreos unclaimed! ;-)
