CINNAMON CHEESECAKE PUDDING PIE

Remember a few weeks ago, I made and posted about the
Well, that creation got my little head spinning about what else to make with the blonde Cinnamon Bun Oreos and thus this Cinnamon Cheesecake Oreo Pudding Pie was born. Get this, my husband even said it was so good that it may replace his Reese Peanut Butter Cake request at his birthday. WOW, major praise.
And Cinnamon is gooood for you!! Cindy Wilson over at Nutri Inspector has a great article on the 23 Health Benefits of Cinnamon
It is so creamy and tasty. Everyone in the house was in love and that makes me happy especially when they save mama the last sliver...

What you'll need

CINNAMON CHEESECAKE PUDDING PIE
Ingredients
1 package Cinnamon Bun Oreo Cookies
1 stick butter
1 package Vanilla pudding mix
2 1/2 cups skim milk
1 8oz brick cream cheese
1 tsp vanilla
1/8 cup skim milk
1 8oz tub lite cool whip
1/2 cup powdered sugar

Directions
Break apart all the cookies (save out a couple for garnish) and scrape the filling into a medium sized mixing bowl, set aside. Place all the cookies into a large gallon ziplock bag and crush with a meat mallet or hammer. Mix with 1/2 of the stick of melted butter. Press into a pie plate and refrigerate. To the mixing bowl, add cream cheese, 1/8 cup milk and tsp vanilla and mix until smooth. Add the powdered sugar, set aside. In another mixing bowl mix the pudding per mixing directions with 2 1/2 cups milk. To that fold in half of the tub of cool whip. Bring crust back out of fridge. First lightly spread the cheesecake mixture. Next layer on the pudding mixture and finally, spread the rest of the cool whip on top. Garnish as desired with left over cookies. Chill in the refrigerator for at least two hours.

CINNAMON BUN MINI OREO CHEESECAKES

From the first bite of a Cinnamon Bun Oreo a couple weeks ago, I immediately knew I needed to come up with a dessert to use these divine cookies in. I thought: cheesecake! I remembered the mini chocolate Oreo cheesecakes my sister-in-law made at Christmas and I knew cinnamon bun mini cheesecakes had to be created!!

Probably a bad idea because they are addictive!! I even talked about them in my Friday Favorites and have since been able to find them in several more stores. Since I was experimenting, I just made a small batch consisting of 6 cheesecakes so you could double this recipe. The 6 are perfect for our family of five...one for each of us with an extra for ME!!! ;-)

What you'll need

CINNAMON BUN MINI OREO CHEESECAKES
Ingredients
8 Cinnamon Bun Oreos
1 (8oz) brick cream cheese
1/4 cup sugar
1/4 cup light brown sugar
1/4 cup sour cream
1 egg
1 tsp. Vanilla
1/8 tsp. Cinnamon

Directions
Preheat the oven to 350 degrees. Line 6 muffin tin slots with a cupcake liner and pave 1 cinnamon Oreo in the bottom of each liner. Crush the other two Oreos to save fir garnish. Beat the cream cheese and sugars together. Add the sour cream, vanilla, cinnamon and egg and blend until smooth. Evenly spoon the cheesecake mixture in top of each Oreo. Drop the pan on the counter a couple times to get any bubbles out. Bake for 20 minutes until centers are set, cool and refrigerate for 3 hours. Garnish with cool whip,/redi whip, cinnamon and crushed Oreos if desired. *Note: if you do double the recipe to make 12, increase to bake time to 25-30 minutes to make sure the middle is set.

HAPPY TASTY TUESDAY!!
Mine's going to taste of cinnamon and cheesecake!!!

Yum

FRIDAY FAVORITES...FEBRUARY LOVE

Warms up, gets cold again..warms up, cold again...no wonder everyone has been sick. Super Bowl weekend is upon us friends. However not much celebrating the pigskin around here as Hubs is taking a son on a college visit to DePaul. Looks like I'll be eating nachos by myself and watching Fixer Upper episodes in between commercials and halftime. I am kinda excited for Coldplay's performance. This weekend looks like a cold one again so I'm grabbing a cup of goodness and chilling. Hope you do much of the same and the weekend is all things lovely!!

5. Two In One Shirt Peeks
Aren't these 2 in One's great! You don't get so hot with double layers and just have to buy one top. I fell in love with this one from Gordmans and how it goes so well with my Hunters, Nike retros or cute flats and boots. The peek of plaid is perfect but it's not a full button down underneath, just the peeks.

Loving all this Inspo too!
