We are a biscuits and gravy family! Well it's only an occasional treat for me, I think my husband and boys can eat them every week! Never once in my life have I made gravy from the packet, I always make it from scratch like my mom and dad always have. Often, I will add scrambled eggs and cheese on top of our Biscuits and Gravy so I decided to combine it all into yummy casserole and I think it was probably the best breakfast casserole I have ever made! I even sent some back with one of a college boys as he thought it was so great.
Ingredients:
1 can jumbo biscuits
1 lb. pork sausage, cooked & crumbled
1/2 cup sweet onion, finely chopped
8 eggs, (I always use brown eggs)
3 cups shredded Colby-Jack cheese
For
the gravy
Drippings
from the sausage
1/2 stick butter
4 Tablespoons flour
2 1/2 cup milk
2 Tablespoons beef base
salt & pepper, to taste
Directions:
Preheat the oven to 350°. In a large skillet, cook your sausage until crumbly and drain the sausage on a paper towel. To the drippings, add your flour and butter and milk to make a rue and then slowly add your milk until the mixture thickens. Season with salt and pepper. Remove from heat or keep on a low simmer. Spray a 9 x 13 pan with cooking spray. Cut up the biscuits and place in the bottom. Next spread the sausage crumbles, then some chopped onion. Spread the shredded cheese. Whisk together your eggs and some salt and pepper and pour over the cheese. Next, pour the gravy over everything and cover with tin foil. Bake for 45 minutes.

ReplyDeleteThis is so different to anything we have over here, breakfast or otherwise, as gravy and biscuits isn't known in the UK. So you know, I'm going to give it a go! You got me loving the Reuben sandwich so I'm sure this will be delicious too. Finding some of the ingredients might be a challenge, think I'll need to get creative with things like the biscuits and the beef base! Thanks for your ideas, Andrea.
