NO soggy broccoli!! Yes, that is right. I do not like it when you make a batch of Beef and Broccoli and the broccoli is soggy and overdone. This is one of the best recipes I have made for it and the idea to microwave steam the broccoli right before serving is brilliant.
This dish is full of flavor and tastes much better in the crock pot than if you made it on the stove. Mainly because those strips of beef get to simmer slowly in all that soy saucy, garlicky, brown sugary goodness. Make sure you use a really goooooooood low sodium soy sauce here since that is the dominant flavor.

What you'll need
INGREDIENTS
1 1/2 lbs sliced sirloin steak
½
cup sweet onions, diced
3
teaspoons garlic, minced
¼
teaspoon ground ginger
1
cup chicken or beef broth
½
cup low sodium soy sauce (I like Kikkoman)
⅓
cup brown sugar, packed
1
tablespoon sesame oil
¼
teaspoon ground black pepper
2-3
tablespoons cornstarch, to thicken
3-4
cups fresh broccoli, steamed (see below)
white
or brown rice, prepared
Garnish
(sesame seeds)
DIRECTIONS
Add steak, onions, and garlic into the crock pot. (I prefer using my small slow cooker with this recipe)
In a medium size bowl stir together broth, soy sauce, brown sugar, sesame oil, ginger and pepper until brown sugar has dissolved.
Pour mixture into slow cooker and stir.
Place the lid on the slow cooker and cook on low for 3-4 hours or until steak is tender to your liking.
Stir in cornstarch to thicken the sauce. (Alternatively you can scoop out a couple tablespoons of broth mixture and mix it with cornstarch to make a sauce and then pour this back into the slow cooker to prevent lumps. I always do this in a little bowl and stir until smooth to add to the mixture)
Taste and adjust seasonings if desired (sometimes I'll add in some onion powder and garlic powder)
Place bite sized broccoli in a covered 2 quart dish with 1/4 cup water and microwave for about 5-6 minutes, drain any water left. Now add your broccoli to your beef mixture right before serving.
To serve, place rice on a plate and top with beef and broccoli.
Garnish with sesame seeds if desired.
