BEST BEEF AND BROCCOLI

Hello, here's to the start of a great week!
If you're like me sometimes you run into a "What to fix for dinner?" rut. On weeks like that, it seems like I stop by the grocery store way too often to grab this or that because of the recipe ideas that pop in my head. Here is an Amazing Beef and Broccoli recipe that is really easy and quick. I have tried many Beef and Broccoli recipes and this one is by far, the favorite.

THE BEST BEEF AND BROCCOLI

Sauce:
1 tbsp rice wine vinegar
2 tbsp low-sodium chicken broth
5 tbsp hoisin sauce
1 tbsp toasted sesame oil
2 tsp cornstarch

Beef and Broccoli:
3 tbsp soy sauce
1 1/2 pounds sirloin round steak cut into 1/8 inch pieces
6 cups bite-sized pieces of Broccoli
2 Tbsp minced garlic
½ tsp. ground ginger
1 tsp canola, plus extra for cooking
1/3 cup water

Directions:

1. In a medium bowl, combine beef and soy sauce. Cover with plastic wrap and refrigerate at least 10 minutes or up to 1 hour. Meanwhile, whisk the sauce ingredients together in a liquid measure or small bowl. In another small bowl, combine garlic, ginger, and 1 canola oil. Set aside.

2.  Heat 1-2 teaspoons canola oil in 12-inch nonstick skillet over medium-high heat until hot. Add half of beef to skillet and break up clumps; cook, without stirring, for 1 minute, then stir and cook until beef is browned around edges and cooked through, about 1-2 minutes. Don’t overcook the meat – cook until just barely cooked through so the meat stays tender. Transfer beef to a medium bowl and cover with tin foil. Heat another 1-2 teaspoons canola oil in the skillet and repeat with remaining beef.

3.  Add 1 tablespoon canola oil to now-empty skillet; heat unti hot. Add broccoli and cook 30 seconds; add water, cover pan, and lower heat to medium. Steam broccoli until tender-crisp, about 2 minutes. Push the broccoli to the sides of the skillet and add the garlic/ginger mixture. Cook about 15-30 seconds. Stir the mixture into the broccoli. Add the beef back to skillet and toss to combine. Whisk the sauce to recombine and add to the skillet. Cook, stirring constantly, until sauce is thickened and evenly distributed, about 1-2 minutes. Serve with rice. (We prefer brown) Enjoy!

"I do not like broccoli. And I haven't liked it since I was a little kid and my mother made me eat it. And I'm President of the United States and I'm not going to eat any more broccoli."

  1. oh yum! This looks delicious! I'm a huge fan of beef & broccoli but never tried making it. I usually buy the bag from Trader Joe's if I'm making it at home, but this recipe doesn't make it seem complicated at all. Thanks! :)

Oh, I can totally relate to the what-to-fix-for-dinner rut at the moment - there are phases when I've exhausted my go-to recipes and coming up with a meal-idea feels like such a chore then-. But it's really exciting to go hunting for new recipes! Will definitely try out this one! Cheers from Tokyo- Mareike
