This recipe is one of my oldest. Funny thing is I haven’t made them in years and Mr. Nine’s sister’s name is Beth but they are not named after her, lol! They are my favorite oatmeal raisin cookie in the entire world! I made a batch recently and this time, it will not be years before the next batch is made. So good! They go fast because they have the best flavor!
What you'll need
Beth’s Spicy Oatmeal Cookies
INGREDIENTS
1/2 cup butter flavored shortening
1/2 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3 cups oats
1 cup raisins
DIRECTIONS
Preheat oven to 350 degrees. Blend the butter flavored shortening and butter together. Add the sugars and blend. Add the eggs and vanilla and mix again. Combine the flour, baking soda, salt, cinnamon and cloves and stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto unreleased cookie sheets. Bake 10-12 until light golden.Cool for a couple minutes before removing from cookie sheets. Store in an airtight container. Soooo Good!

ReplyDeleteThese sound delicious! I add just a dash of nutmeg to mine and often substitute chocolate or butterscotch chips for the raisins. LOL. I like raisins but not in my desserts. ;)

ReplyDeleteHi Andrea,
ReplyDeleteI made these cookies today and they taste really good.
My cookies did not come out looking like yours though. I did the recipe exactly like yours for the first batch and mine look like oatmeal raisin balls. LOl. For the second batch I flattened them out a little and they looked better. I don't know why they came out like that and I did everything exactly like your recipe. Can you think of a reason why they came out like this? The only thing I did different was to use splenda sugar instead of regular sugar.
I made them to send out to my girl at her college for her birthday next week. I know she will like them.
Thanks for the recipe.
Hugs, Julie xo
I could just reach for one of these Andrea :) Yummy.
