So, I have probably told
you before, like when I made my Soulful Chicken Soup, that my husband is
not a fan of noodles, however I was craving a comforting chicken casserole And
this was an amazing one to put together. I made it while the boys were all home and
they scarfed it down and I had a couple nice dishes of it for leftovers at
work.

What you'll need
CHICKEN NOODLE CASSEROLE
INGREDIENTS
1 can (10-3/4 ounces) condensed cream
of chicken soup, undiluted
1/2
cup mayonnaise
2
tablespoons lemon juice
2
cups cubed cooked chicken
1
small onion, chopped
1/4
cup chopped green pepper
1/4
cup chopped sweet red pepper
1
cup shredded Monterey Jack cheese, divided
1 cup shredded sharp cheddar cheese,
divided
12 oz. egg noodles, cooked and
drained
DIRECTIONS
In a large bowl, combine the soup,
mayonnaise and lemon juice. Stir in the chicken, onion, peppers, 1/2 cup Monterey
Jack cheese and 1/2 cup cheddar cheese. Add noodles and toss to coat. Transfer
to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes.
Sprinkle with remaining cheeses. Bake 10 minutes longer or until cheese is
melted.

ReplyDeleteYumsville, you Domestic Angel, and so weird. For decades I've lived with the image of clever American ladies doing amazing things with Campbell's soup and mayo. We didn't use those two ingredients in cooking. When I finally found myself a real life American sister in law I asked for her recipes with those two magic ingredients. She struggled then gave me ... one recipe. It shattered my illusion ... But now you, my sweetie, have reinstated that image and faith once more. Thank you! I will definitely try this soon. Hugs, xxx.

We had shepherds pie last week also! :) My neighbor brought over a container of mashed potatoes (she cooks for an army and we benefit. lol), so what else was I to do?? ReplyDeleteIt looks delicious! I used to use condensed chicken soup a lot in recipes until I realised I am lactose intolerant! Such a bummer.... it would be nice if they made a lactose-free version :)
