SWEEPSTAKES PEANUT BUTTER FUDGE

It just blows my mind that I realized I have never shared my award-winning peanut butter fudge with you! Many people love it so much, they request a whole pan to themselves. This yummy fudge won me my first purple sweepstakes ribbon many years ago at our county fair. It is literally the easiest fudge recipe ever! I cannot even begin to tell you how many batches I make each holiday season of this! I always prep ahead by sifting several pounds of powdered sugar and cutting all my wax paper to fit the pans. It saves so much time. The key to this amazing fudge is to use really really good butter. I’m talking like a European salted butter or an extra creamy butter and definitely make sure you use a salted variety.

The really cool part is that this is made in the microwave which makes it super easy and quick. I always have lots of powdered sugar sifted ahead of time as well as my wax or parchment paper cut to fit the pans.

What you'll need


Sweepstakes Peanut Butter Fudge
INGREDIENTS 
1 1/2 sticks salted butter
1 cup creamy peanut butter
3 1/2 cups shifted powdered sugar
1 tsp. Vanilla extract 

DIRECTIONS 
Cut two pieces of wax or parchment paper to fit an 8 x 8 pan. Spray that 8 x 8 baking pan with nonstick cooking spray and line with a piece of the wax or parchment paper. Spray with nonstick cooking spray again reserve a piece of wax or parchment paper for the top of fudge. 
In a large microwave safe glass bowl or large glass measuring cup, place the butter and peanut butter and microwave for 2 minutes, remove, stir and microwave for another two minutes. The mixture will be bubbling so remove and quickly stir in the powdered sugar and vanilla until all the powdered sugar is blended in well transfer to your lined baking dish and smooth out the fudge as evenly as you can with a spoon or spatula. Top with the other piece of wax or parchment paper and smooth down again with one of your utensils. Place in the refrigerator for one hour. Remove and cut into squares. Store in an airtight container or if you like your fudge cold, the refrigerator.

 Here is my large measuring cup I microwave the butter and PB in. 

I went back under the waxed paper and smoothed down the bubbles.





CHRISTMAS ON THE OUTSIDE...MERRY & BRIGHT

Happy Monday! Can you believe that next Monday will be Christmas Eve? Stop it, just slow it down right now! I have so much more festivity I want to share. Last Monday I brought you the Indoor Decor and today I bring you the fun outside cheer! Some of you may have seen my front porch photo on  Instagram a few weeks ago but I’m happy to share even more with you today. Next year my plan is to add lots and lots more lights outside including a couple lighted deer. 

The snowflakes are tied on with fishing line and are from Walmart, under $3 each!

This vintage looking truck is favorite find of mine. The mom of one of the boys classmates started a cute little shop and the minute I saw this at her Fall open house, I knew I had to have it! 







The tree is a 4ft lit from Michaels that I put in a tall summer planter. I took the legs off and put it into one of those styrofoam holder pieces. The buffalo plaid garland is from Kirklands and a favorite find! All the picks are from Jo-Ann fabrics.



This year we kept it simple with the topiary trees and Buffalo plaid goodness, and of course I had to have a wreath on all the windows. When one of our sons was home for Thanksgiving he got on the ladder and put up the top ones but with our steep roof he about bit it which made this mama a worried mess. But he handled it like a champ and I will probably need him to take those down before he heads back to college, LOL!

I also had to show you a picture of my Merry & Bright T-shirt! It is from my wonderful friend at shop at bash and I just love the shade of red it is! I had the perfect earrings to go with and love wearing it around the house with my leggings or out and about with the cute flannel over It and some cozy Ugg boots of course!

FRIDAY FAVORITES..CHRISTMAS IS MAGIC EDITION

Are the bells a shaken in your neck of the woods? Is the excitement of the Christmas day, birth of our baby Jesus growing even more anticipated? Or are you stressing out big time? I’m pretty much under control. Just a few more things to get and wrap but I sure got my baking on big time this week and all my baby boys are home! NBC aired a Pentatonix special Monday night and Kelly Clarkson guest starred to sing My Grownup Christmas Wish with them and it was AMAZING! I have always loved both of them and their voices are pure magic!

2. Holiday Gift Find ~ Mini Games
Besides the usual clothes, electronics, gift cards, etc, I like to get the kids some fun little things. I recently discovered these tiny desk top games and they are so cute and all like $8. 
They are Prime so should be here in time for Christmas.

Cookie Trays
Yep several cookie trays went out this week and I had almost forgotten about my festive buffalo plaid apron that I got a couple years ago on clearance a week or two after Christmas for like 4 bucks at Kohl’s! Isn’t it just the cutest thing.

Cute Surprise Christmas Decor 

My very sweet mom came over and gave me some delightful Christmas Décor. We have a local floral and gift shop that she adores and they were packed to the gills with festive finds. They are having 40% off until the end if he season, so I am going to have to mosey on over there as it is less than 10 minutes form my house and I love adding to this growing décor collection!
