THUMBELINA COOKIES

These precious Thumbelina cookies go way way back! I have fun memories of my mom and spooning the colored frosting into the little dents of the buttery and tasty cookies! Tasty Tuesday at it's best with cookies!

They always add that perfect touch of color to all my cookie platters and trays as well. They are so tasty that sometimes I pop the whole thing into my mouth as you can make them kind of tiny and almost bite sized!

Plus, I always loved the fairytale Thumbelina and these petite little cookies carry that name perfectly! They truly are so incredibly yummy. I make a couple other Dent cookies but these are definitely my favorite and one of the many baking traditions of the Christmas season!

THUMBELINA COOKIES
INGREDIENTS
1/2 cup butter, softened
1/4 cup white sugar
1 egg yolk, beaten
1 teaspoon vanilla
1 cup all-purpose flour
1/2 teaspoon salt

FROSTING
1/2 cup butter, softened
1 1/2 cup powdered sugar
2 tsp vanilla
red and green food colorings

DIRECTIONS
Preheat oven to 350°. Cream together the butter and sugar. Beat in egg yolk and vanilla. Blend in the flour and salt. Shape into 1-inch balls. Place on ungreased cookie sheet. Dent center of each ball. Bake for 5 minutes. Remove from the oven, dent center again, and bake for 8 to 10 minutes longer. Cool. For frosting, beat first 3 ingredients until fluffy. Divide frosting in half by placing in two different bowls. Tint each half, one with red food coloring and one with green food coloring to your desired color. Fill in dents with frosting.

HOLIDAY LOOKS...THE GOLDEN SKIRT & WUW

This Fall, I have loved a good golden hue. A few weeks ago, I told you about the skirt I had ordered from Amazon for family pictures. I was really worried how the skirt with a look, but it is phenomenal. It’s an elastic waist band and not only comes with a black belt but a chiffon sash in the same color. Since I tied the front of this denim shirt, I opted not to even use the sash and I love the way it turned out. Today, our fashion prompt at TBB is holiday looks and I thought since I wore this for our holiday family Christmas card pictures this past weekend that it was the perfect outfit to showcase. A great price that packs a fabulous festive punch!
AND it's What's Up Wednesday too!

Can’t wait to get out Christmas cards, which many of you will be receiving. Then, you can see how I coordinated Mr. Nine’s and our 3 boy’s outfits.

WHITE CHOCOLATE DIPPED SNICKERDOODLES

My mom made delicious Snickerdoodles growing up, but for some reason I never include them in my Holiday baking sessions. That all changed this year when I decided to add some additional decadence to them and dip them in white chocolate.
Yum

Sooooo good and festive with a little candy embellishment.
After I made them I pondered why I waited so long..Snickerdoodles are not only a fun cookie name to say but ever so delicious and they transport me back to my mom's baking growing up and eating them warm from the oven with an iced cold glass of milk.
So Cute!!

HAPPY HOLIDAY TASTY TUESDAY SWEET FRIENDS!!

ALMOND THUMBPRINT COOKIES with BUTTERSCOTCH FROSTING

When I was a little girl, my mom would always make thumbprint cookies at Christmas time and we would put green or red icing in the thumbprint indents. The buttery shortbread type cookie is a huge hit and fun to pop the whole thing right in your mouth. Wanting to come up with an all-year version, I created these almond thumbprint cookies and they are another one of my sweepstakes winning baked goods. They melt in your mouth.

I do make these at Christmas time as well for holiday gift platters. They are sweet, buttery, light and the butterscotch frosting complements the almond flavor so well.

What you'll need

ALMOND THUMBPRINT COOKIES WITH BUTTERSCOTCH FROSTING

Cookies
2 cups sifted all-purpose flour
1/2 cup sugar
1/4 teaspoon salt
1 cup unsalted butter
3/4 cup grated unblanched almonds
2 teaspoons vanilla

Frosting
6 Tablespoons unsalted butter
1/3 cup half and half or whipping cream
2/3 cup light brown sugar, packed
2 cups powdered sugar
1 teaspoon vanilla extract
Optional: Chopped pistachio nuts for garnish

For Cookies:
Heat oven to 350 degrees. Sift flour, sugar and salt into bowl. Cut in butter until mixture resembles coarse crumbs.
Blend in almonds and vanilla. Work mixture with fingers until a ball of dough is formed. Then shape into 1-inch balls.

Place balls on greased cookie sheets; make a depression in center of each cookie. I use the end of a wooden spoon. Bake about 8 minutes; remove from oven. Dent again and bake about 8 minutes longer; cool.
For Frosting: Blend butter, half-and-half or cream and brown sugar in saucepan. Boil 2 minutes, stirring constantly; remove from heat. Cool about 15 minutes, then stir in confectioners' sugar and vanilla. Beat until smooth and thick.
Fill depressions in cookies with butterscotch frosting and sprinkle frosting with nuts.

Relax and Enjoy!!
