PUMPKIN SPICED FUDGE


I am a fudge connoisseur. I love a good little piece of fudge. My love of fudge began years ago when every Fall, my mom would make her famous White Fudge, sometimes it would turn out perfect; other times it would not and we'd be eating it out of the pan with a spoon. That's the thing with fudge, it doesn't always turn out, that's why the key word with fudge making is patience!! When she makes it now, it is so special and I covet every bite. This pumpkin spiced fudge is another Fair sweepstakes winner and I love that it makes a lot for gift giving. I love cutting these into little cubes and just a small piece completely satisfies that Fall treat craving! Yum




PUMPKIN SPICED FUDGE

INGREDIENTS 
1 3/4 cup white sugar
1 cup packed light brown sugar
1 1/2 sticks butter
2/3 cup (5oz) evaporated milk, I use 2%
1/2 cup 100% pure pumpkin
2 teaspoons pumpkin pie spice
1 12oz package white chocolate chips
1 jar (7oz) Marshmallow cream
1/2 cup chopped pecans
2 teaspoons vanilla

DIRECTIONS
Line a 9x13 baking pan with foil and lightly spray with cooling spray. In a medium heavy saucepan, combine sugar, brown sugar, butter, evaporated milk, pumpkin and pumpkin pie spice. Bring to a full boil over medium heat, stirring constantly until your candy thermometer reaches the soft ball stage (234-240 degrees) Tip, if you don't have a candy thermometer, boil this for about 10-12 minutes then place a drop of the mixture in cold water, if it forms a soft ball, it's ready, if not boil a little longer and do again.) Remove pan from heat and quickly sit in the white chocolate chips, marshmallow cream, nuts and vanilla, stirring until smooth, about one minute. Pour into prepared baking pan. Let cool on counter for 2 hours., Cover tightly and put in refrigerator for another couple hours. To Cut, loft from pan, remove foil, cut into small squares and store in a tight container.




This fudge will last for up to 3 weeks. It makes a great gift and yummy lil treat at a get-together, Thanksgiving and Christmas. It is one of the candies I make to go on the Christmas platters I give away.
