WHITE CHOCOLATE PINK MOSCATO CUPCAKES


If the weather is not going to hurry up and get Spring-like maybe I can add Spring to the kitchen with fresh flowers, my favorite pink champagne or moscato and yummy cupcakes! Seeing my bottle of pink bubbly and not been able to drink it out on the patio made me decide if I can't drink wine on the porch, I can eat cupcakes on the couch!

 Thus, this recipe was born and I'm am absolutely in love with how fluffy yummy they turned out! I simply love how girly they are and pretty for spring! 

 You obviously know by now how much of a Moscato and champagne fan I am! To me, they are very similar and since I love the both the pink Moscato and the Barefoot pink Moscato champagne, I wanted to see what would happen if I added both of these yummy bubbly's to a the cupcake and buttercream frosting! The result is pure heaven!


Can you imagine, serving these at brunch, baby showers, bridal shower's or a girls night in! I even let my teenagers try them, they thought they were pretty special. 
What You'll Need


WHITE CHOCOLATE PINK MOSCATO CUPCAKES
Ingredients
  • 1 Small Box of White or French Vanilla Cake Mix
  • 1- 3.4 oz. of White Chocolate Instant Pudding
  • 4 Large Egg Whites
  • 1/2 cup of Sour Cream
  • 1 cup of Olive Oil or Canola Oil
  • 1/2 cup of Heavy Cream
  • 1 tsp of Vanilla Extract
  • 1/4 tsp of Sea Salt
  • 2 Tbsp Pink Moscato  
  • 1 cup (2 sticks) Unsalted Butter
  • 1 tsp. Vanilla
  • 4 - 5 cups Confectioners' Sugar
  • 3 tbsp Barefoot Bubbly Pink Moscato Champagne
  • 2 drops red food coloring. 
Instructions
Preheat the oven or stove to 350°. Line the cupcake pan with fresh liners. Gently Beat all of the ingredients together until the texture is nice and smooth. Carefully Fill the cupcake liners around 2/3 full of the cupcake batter. Cook cupcakes for around 18 - 20 mins and Gently Test with a clean toothpick to make sure that they are fully cooked, remove and transfer cooked cupcakes to a safe cooling rack. 
Frosting
Gently Cream butter with a mixer.  Add the vanilla and Add some fresh confectioner's sugar at about 1/2 cup at a time. Mix on high speed for around 3 minutes, the frosting should be nice and fluffy and very smooth. Add Champagne and food coloring & whip for another 2 minutes.
