FRIDAY FAVORITES....HELLO SPRING

It’s Spring, It’s Spring, we’re gonna get some sunshine this weekend, yay and it will feel so good even if the high is 50 degrees and it’s back to winter next week but I will take what I can get!!! I hope your weekend is fabulous and kickin’ off the Spring season right! 

1. Our Sweet Niece Goes Green
Spring Break for our kids meant tropical destinations and boy did they have a ball but for our sweet niece, Myka, it was giving back and it meant caring about our environment and we are so proud of her. It was called an alternative spring break where she and some other college students headed down to Austin, Texas to learn what it means to be food secure and how local farms grow sustainable foods. They helped the farm prepare for the spring season by planting vegetables and helped harvest their produce that was to be taken out into the local community. And they too had a ball!!

2. Mammo

In keeping my health on track this Spring, I had my mammogram this week and next week is my yearly! So important girls! And the results were fine, whew!


My favorite Mammographer in the whole world....Dawn..the BEST. 
What will I do when she retires in a few years?

My sweet friend Chrissy of Granola and Grace has the most precious and carefree heart you can imagine. She sent me the sweetest card and most darling pair of socks that completely lifted my day! LADY LUCK

Happy Wednesday! And a VERY Happy first day of spring! Now, let’s hope mother nature got the memo and stays on track! Today’s fashion theme is Lady Luck but this wouldn’t have just been a DRESS to wear for last weekend’s festivities, I’m calling this my Spring Sensational dress! The reason being is that the green reminds me of all the green that is going to start sprouting up with lovely spring weather coming our way. The grass is still brown right now but before you know it it will be a lush green and the birds will really be singing! 

I love lots of things about this outfit but especially that the dress has pockets, is under $17 and comes in oodles of colors and the Earrings! Well, I love them so much, I now have them in 4 colors! The Kendra Scott Necklace was a Christmas gift from Mr. Nine and it is quickly becoming a favorite! You can bet I'll be adding some wedge sandals with this dress soon too!

MINI CADBURY CREME EGG CUPCAKES

Aren’t they pretty? I know many of you are not Cadbury Creme Egg fans but these mini cupcakes are scrumptious! The mini egg hidden inside holds its shape but the middle takes on a more Carmel like taste and texture. While I don’t often use a boxed cake mix, I decided to doctor this up by adding pudding to the mix and altering the ingredients a bit. It makes for the moistest cake and tastes so much more like homemade. This makes a lot of batter so not only did I make cupcakes, I made a single layer 8x8 as well. I was so happy to find sweet pastel gel food colorings that make the prettiest color. I was tickled pink with how these cuties turned out. The perfect little mini Easter treat! So sweet! 

What you'll need

Mini Cadbury Creme Egg Cupcakes

INGREDIENTS 

Cake

1 box chocolate cake mix

1 small box instant chocolate pudding 

4 eggs

1 cup canola oil 

1 cup sour cream

1/2 cup Milk

1 teaspoon vanilla

Pinch of Salt

Frosting 

1 stick unsalted butter, softened 

3-4 cups Powdered Sugar

1 Tablespoon Milk

1 teaspoon Vanilla

1/4 teaspoon Almond extract 

1/8 teaspoon Salt

DIRECTIONS
Preheat oven per directions for cupcakes on the back of the cake mix box. Mix all the cake ingredients in a large mixing bowl with a mixing spoon and stir just until dry and wet ingredients are combined. Unwrap the mini chocolate creme eggs. Line mini muffin tin. With a small spoon, spoon about half bath into each liner. Then place a mini egg in each, narrow part of egg up. Spoon enough batter onto just to cover. Since they are mini, I did reduce baking time by 8-10 minutes per the box. Test with toothpick when finished and adjust time as needed. For the frosting: With a mixer in a medium bowl, mix the butter, milk, vanilla & almond extract until creamy. Mix in the salt. Then, slow mix in the powered sugar in increments. Add more to less for desired frosting consistency. Divide into smaller bowls, depending in how many colors you want and add 1-2 drops of food coloring to each bowl of frosting. When cupcakes are cool, frost as desired.
