FRIDAY FAVORITES...ENJOYING SEPTEMBER

Happy Friday. I’m going to go get corn on the cob at a Farmer’s Market today along with a tomato for BLT’s tonight. Probably be our last one of the season. Let’s get to favorites. That meal Is a fav for sure.

1. Last Weekend Fun

Had a sweet Labor Day weekend last weekend despite the weather not being what we wanted. One of the best things to come out of it is our son and his girlfriend finally got us rents together, although they don’t live at home anymore, lol! I was already good friends with our son’s girlfriend’s mom but we finally got dad‘s to meet and what a good time we had at dinner and a little Notre Dame tailgate.



Such a Bummer and lost but lots of FUN!


Sunday, we took a Stella Mae to a beach town. No other photos, just immersed in a sweet day and eating pizza having cocktails and watching a live band.

2. Friday FALL Features
Recipe: CHEESEBURGER GNOCCHI

I’m realizing with all the new readers; you might not know all the fabulous recipes I’ve shared in in the past. Seeing as it is basically Fall and one of my favorite seasons for recipes, on my Friday favs, I’m going to feature some of my most beloved recipes for the next few weeks. And while you would think with my sweet tooth I’m starting with a sweet treat, no I’m starting with one of our savory favorite dinner dishes: Cheeseburger Gnocchi.

CHEESEBURGER GNOCCHI


Cheeseburger, Cheeseburger, Cheeseburger, yeah, I have no problem saying the word cheeseburger but gnocchi on the other hand...took me until last year to pronounce it because it was never something that was on our menu but boy are we ever glad it is now. Since I told you I’d be sharing this in my Fall Recipe Preview, I’ve made it 3 times.

We love it, it has a tiny kick to it, is so flavorful and just hits the spot, especially on a cool night. While there are several ingredients, it’s not that tough to make and the blend of seasonings is so tasty. 



What you'll need

CHEESEBURGER GNOCCHI
INGREDIENTS
2 Tbsp. Butter
1 (16 Oz) Potato Gnocchi 
1 pound ground sirloin 
1 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon cumin
1/2 teaspoon paprika
1 teaspoon mustard powder
1 small onion, chopped
2 teaspoons minced garlic
1 (10oz) can Ro-Tel diced tomatoes with green Chiles 
1 cup beef broth
1/4 cup heavy cream
1 1/2 Cups shredded Sharp Cheddar Cheese 
Scallions optional for garnish 

DIRECTIONS 
Melt butter in a large skillet over medium heat and cook gnocchi until golden brown, about 2 minutes, toss pan to get other side browned, about 2-3 more minutes. Transfer gnocchi to plate. Mix all spices in small bowl: the salt, pepper, cumin, paprika and mustard powder. Turn heat up to high and cook sirloin, onion and garlic until sirloin is no longer pink, add in spice mixture. Add the tomatoes, beef broth and gnocchi and bring to a boil. Cover and turn heat to low and simmer for about 5-8 minutes until gnocchi is tender and much of the liquid is absorbed. Add the cream and half the cheese and stir until cheese melts. Top with rest of cheese and stick under broiler until browned if desired. Add scallions to top if preferred.
