Happy Tasty Tuesday! I have loved homemade chicken salad all my life and have made it on numerous occasions for large gatherings like baby showers, girls night in parties, etc.

The reason I titled this Chunky Chicken Salad Today is that it is so versatile that it is often a little different every time I make it depending on what I have on hand, my mood or what sounds good. This is the recipe I made for today and it is the one I use most often. This is on large croissants but for a party, I love to get the mini croissants, which most grocery store bakeries will make for you if you call ahead a few days. This is even yummy chilled and scooped on a bed of lettuce.
Here is why I am pulling this puppy out in the Holiday Season: Totally yummy with diced apples, craisins (dried cranberries) and even made with left over turkey!!
CHUNKY CHICKEN SALAD
Ingredients
4 bone in split chicken breasts
1 Tablespoon chicken base (mine has parsley flakes in it)
1/3 cup chopped celery
1/3 cup chopped onions
1/2 cup red grapes, cut in half
1/4 cup shredded cheese
Light Hellman's Mayonnaise
lemon juice
salt and pepper
reserved chicken broth
1/4 cup chopped pecans
Directions
Boil the chicken breast with the chicken base until cooked through. Let cool on plate. Reserved the chicken broth. Dice up your celery, onion and grapes. When chicken is cool, cut off bone and chop into chunks. Mix chicken, celery, onions, grapes, cheese desired Mayo, salt and pepper, a squirt of lemon juice and a little of the reserved chicken broth. I use about 1/4 cup. (save any remaining chicken broth for other recipes you make in the week) Chill salad in fridge for a bit. Serve the chicken salad alone, on croissants or a bed of lettuce topping each serving with some of the chopped pecans.

ReplyDeleteI freaking love chicken salad!!! I made some for Chris for his lunches this week....but he doesn't like the fruity nutty ones like I do. I used lemon juice, parsley, celery and red onions for his. I will have to try your recipe for me!
