CHICKEN NOODLE CASSEROLE

So, I have probably told you before, like when I made my Soulful Chicken Soup, that my husband is not a fan of noodles, however I was craving a comforting chicken casserole And this was an amazing one to put together. I made it while the boys were all home and they scarfed it down and I had a couple nice dishes of it for leftovers at work.
Yum

Super filling and nice blend of flavors.

What you'll need

CHICKEN NOODLE CASSEROLE
INGREDIENTS
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup mayonnaise
2 tablespoons lemon juice
2 cups cubed cooked chicken
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1 cup shredded Monterey Jack cheese, divided
1 cup shredded sharp cheddar cheese, divided
12 oz. egg noodles, cooked and drained

DIRECTIONS

In a large bowl, combine the soup, mayonnaise and lemon juice. Stir in the chicken, onion, peppers, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese. Add noodles and toss to coat. Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes. Sprinkle with remaining cheeses. Bake 10 minutes longer or until cheese is melted.

Very Comforting and yummy!

  14. Could I substitute Greek yogurt for the mayonnaise in the recipe? The recipe looks delicious but I detest mayonnaise.

  18. Yumsville, you Domestic Angel, and so weird. For decades I've lived with the image of clever American ladies doing amazing things with Campbell's soup and mayo. We didn't use those two ingredients in cooking. When I finally found myself a real life American sister in law I asked for her recipes with those two magic ingredients. She struggled then gave me ... one recipe. It shattered my illusion ... But now you, my sweetie, have reinstated that image and faith once more. Thank you! I will definitely try this soon. Hugs, xxx.

  20. How yummy! I love the idea of a chicken noddle casserole. Eric is actually a big casserole guy because his grandmother always used to make them and I don't nearly make them enough. I might have to throw this one into a dinner mix. Sierra~Beautifully Candid

  29. We had shepherds pie last week also! :) My neighbor brought over a container of mashed potatoes (she cooks for an army and we benefit. lol), so what else was I to do?? Your chicken noodle casserole looks perfect for a home of boys! Thank you for sharing your fab cooking. And as far as the dress goes. So, so pretty. I love how you styled it with the booties and the way you have a nose for great deals!! Love it all! Oh and are you on Facebook or Instagram??

  30. It looks delicious! I used to use condensed chicken soup a lot in recipes until I realised I am lactose intolerant! Such a bummer.... it would be nice if they made a lactose-free version :)

  36. Oh, my gosh, I am losing my mind. Saw mention of this recipe on Laura's blog, followed the link here, then saw the comment above from Lauren at Shooting Stars Mag and opened a tab to read her blog. Then forgot what I was doing completely and went to Sarah's blog. Yikes. Wish all of that hopping around burned calories.

This casserole looks amazing. You had me with the cheese. PC will love it. Can't wait to make it. Pinning now.
