Do you want to indulge in the most moist, lovely looking cake on the planet? Well, Sock it to me because I found the cake for you and I'm just dying to have a brunch now and serve it with mimosas and egg casserole, lol.

I have mentioned before, I am not a huge cake lover and while I had heard of these cakes, I had never tasted one until my friend Tami brought me a slice to try. She is just like me, not big on cake, but the moist, cinnamon flavor with glazy icing goodness won us over.
I don't use a bundt pan very often so this recipe with the cinnamon, pecan filling was fun to add. It is such a gorgeous cake and could just make it on an Easter recipe roaster. So good with coffee or tea too!!
What you'll need
Sock It To Me Cake
INGREDIENTS
Cake:
1 box vanilla cake mix
1 cup sour cream
1/3 cup oil
1/4 cup sugar
1/4 cup water
4 eggs
Filling:
2 Tablespoons of the mixed cake mixture
2 teaspoons cinnamon
2 Tablespoons brown sugar
1 cup finely chopped pecans
DIRECTIONS
Preheat the oven to 375 degrees. On medium speed, mix all the cake ingredients, saving out 2 Tablespoons for the filling. Pour 1/2 mixture into a greased small bundt pan. Mix ingredients for filling together and evenly spread over mix. Top with one half of the remaining cake mixture. You will have about 1/4 of the entire mixture left which you would use is making a large bundt cake. Bake for 40-45 minutes, cool in the pan for 30 minutes, the invert onto serving plate. When cooled, mix 1 cup powdered sugar and 2 Tablespoons of milk. Drizzle over cooled cake.

ReplyDeleteI am not huge on desserts or cakes either but my mom makes similar Bundt cakes all the time (usually minus the icing) and they taste delish. Before you even mentioned I was going to mention how this would be great for breakfast with tea, coffee or even mimosa like you said. It sounds very similar to coffee cake. =)

Sock-it-to-me Cake was popular back in the early seventies. I think I still have my Mama's recipe . She used a Duncan Hines Butter Recipe Yellow cake mix. It was all the rage back then. I haven't had one in years. Funny how things come in and out of style.
