Hands-down, my favorite salad of the entire summer is a strawberry spinach salad with poppyseed dressing. I am sure many of you have seen recipes like this, however, this is just too good and refreshing not to share the one I make at least once a week in the summer! I love all the goodies you can add to this perfect salad. I start with spinach, strawberries and of course these candy pecans.

For me, some kind of cheese is a must on a salad. My favorite on the salad is feta cheese and I'm also really liking goat cheese right now too.
Sometimes I add Craisins, bacon or thin sliced red onion or if I do not have the pecans I'll do slivered almonds.
You could even add some grilled chicken two for protein if you want. However, I like to keep this light and simple and is a great no meat option for dinner or as a side salad with some yummy chicken breast, steaks or even some burgers. I especially like bringing my little mason jar dressing to work and having it for lunch, it just seems to hit the spot around noon time!
I like this best with my homemade poppyseed dressing. However, in a pinch a good bottled poppyseed will
do. I just like to make sure I keep track of the sugar content and that it has no high fructose corn syrup. My favorite poppyseed dressing to get at the grocery store is this Olde Cap Cod Poppyseed Lite.
STRAWBERRY SPINACH SALAD
4-6 cups baby Spinach
2-3 cups sliced strawberries
Add candies nuts, Craisins, red onion, crumbled cheese, bacon, grilled chicken, etc. to your liking.
DRESSING
1/2 cup olive oil
1/4 cup white wine vinegar
1/3 cup white sugar (I've used Stevia in this too & it works fine, adjust to taste)
1/4 teaspoon paprika
1-2 Tablespoons poppy seeds
Whisk all together and store in a mason jar. This makes 2-4 salads depending on our big you like your salads!
