I could
not let the Luck O' The Irish holiday coming up go by without
posting a little festive treat! Hence these green, Little Irish Girl cookies
were born. Irish runs deep in our blood, our football blood that is...being
tried and true Notre Dame Fighting Irish fans, I get extra excited
with anything green and the name Irish attached.
Now, let's get to these lil green
nuggets of sweetness....Sooo CUTE! AND YUMMY!!
I have made several
variations of the beloved Thumbelina cookies like these. I truly think these
turned out the best...they literally just melt in your mouth and the frosting
is so light and fluffy. The key is whipping the butter with your beaters for at
least 2-3 minutes.
What you'll need
LITTLE IRISH GIRL COOKIES
Ingredients
Cookie
1/2 cup softened Butter
1/4 cup sugar
1 egg yolk, well beaten
1 tsp. Vanilla
4-5 drops green food coloring
1 cup all-purpose flour
1/2 tsp salt
Frosting
1/2 cup softened Butter
1 1/2 cup powdered sugar
1 1/2 tsp vanilla
2 tsp. Bailey's Coffee Creamer
(Optional) and not the Alcohol
2-3 drops food coloring
Directions
Preheat oven to 350 degrees.
Cream together the butter and sugar, beat in egg, vanilla and food coloring.
Blend in flour and salt. Shape into 1" balls. Place on ungraded cookie sheet.
Dent center of each ball (I used the end of a wooden spoon). Bake 5 minutes.
Remove from oven, dent again, bake 8-10 minutes longer. Cool. Beat all frosting
ingredients until fluffy. Fill cookies with green tinted frosting. Store in
airtight container.
