FRIDAY FAVORITES....WOULD'VE BEEN

I’m quite melancholy today because we should’ve been in Bloomington, the first college graduation of the year was to happen this weekend. It’s going to be freezing cold here and I have to carry all my flowerpots inside, all 24 of them and cover all in the ground because it supposed to frost. In a couple weeks will have a dinner to celebrate our graduates. This Friday favorites is part one of two. I’m not even going to go into the soft opening for our state this week, let’s just say we’re going to continue to do our diligence and stay home for the most part. And this Friday Favs is packed full of goodness!


1. Our IU Graduate
Tomorrow was the Day
Tomorrow, we would’ve attended our first graduation at Indiana University for this handsome and brilliant son of ours! I cannot even tell you how incredibly proud we are of this young man and all that he has achieved! Plus, he’s just a genuine sweetheart! I’m not gonna lie, I’ve cried several tears over not being able to see my kids graduate. I even wrote a Blog Post about it. But, the company Herff Jones was sweet enough to send the boys their caps and gowns so we can get some pictures at home and in a couple months we will travel to IU and get some pictures down there with the whole family. For now, I got some in the backyard to commemorate what would’ve been the commencement tomorrow. It was extra special because this is Indiana University’s bicentennial year and all the kids got special copper tassels to commemorate those 200 years. Next week I’ll share our other graduate as his ceremony would’ve been on the 16th.

And I had to share this. Even though his degree is in Informatics and Business, once upon a time he dressed up as a doctor when he was four years old for Halloween. At that time, I worked at the hospital so my friends in HR made him a special badge and our materials management department got him the mask, and the booties and a coworker made his scrubs. So stinking cute and the mask is pretty relevant today, LOL

2. The YETI Bartender

If you know me, and you know I am absolutely crazy about Bailey’s Irish cream! I especially love in the fall and winter in hot chocolate and coffee. However, imagine my delight when the idea spring in my mind to do a Bailey’s chocolate martini for the Yeti Bartender! It is not only gorgeous, but it is absolutely delicious! Check it out!!





3. Queen of the Pool
I got the sweetest surprise in the mail this week! At first it was a sweet mystery because I didn’t know who it was from but in the back my mind, I had a feeling it might be this darling friend of mine! My dear Lisa From Coast to Coast who all of you know and Love, had sent me a package through the mail that she handed directly to the postman. Well, it never made it and it was full of all of my favorite things as Lisa knows me so well and has impeccable taste! She felt horrible that the USPS lost my package and was so precious to send me this T-shirt that I absolutely adore! She and I are both big-time pool girls and this T-Shirt is so me! I love it so much and I love her!

It is freezing cold in Indiana now, but we got lucky this past weekend and were able to have our first pool day of the season! The temperature was in the high 70s and the pool was perfect. Here are some highlights including my new favorite hard seltzer, strawberry, whip cream and amaretto snacks, my new elephant ears all potted and...


...... on our pool shed, a robin bird has built a nest and laid five eggs! It was also Lisa who told me that the mama Robin just lays one egg a day. So cool. I cannot wait to see the sweet little one’s hatch. We try to stay as far away from it as possible to give her space!

Wearing my Jean overalls in every season. You remember when I styled it with a black turtleneck and sock booties? Well, with the warmer weather, I can just put a white tank underneath and maybe a lightweight button up over it.

Wednesday ~ Bringing The Brights

AIR FRYER

Yep! I finally did it. And I should just call this Friday Favorites the Lisa edition because After discussing it with her, I bought the air fryer she recommended and I’m so excited to try different recipes in it. BUT first attempt, I burnt the fries, the boys said NOT to use the fries preset as it is way too long. THOUGHTS PLEASE.....so I don't burn anything else.

I am crazy for leopard shoes especially, but I have this quirk where I like them to be the genuine calf hair, so I was so excited to find these heeled sandals in the perfect leopard.

Mother’s Day will look very different this year. We won’t be going out for brunch and we will be masked, and no hugs but I will get to see her and nothing can diminish a mother’s love!

BUCKEYE BROWNIE COOKIES....AND A BUCKEYE COCKTAIL

I just had to do it again. I had to give my friends a Two for Tuesday recipe since the Pineapple one was so fun! Many of you may have heard of buckeyes. Literally dozens of these will don my counter-tops as I dip, dip and dip some more peanut butter goodness balls in chocolate.

Until then, how about the delightful taste of a buckeye candy on top a brownie base to make one heck of a yummy cookie!! Then whip up a buckeye cocktail. Oh and don't mistake the buckeye love for Ohio State. Boo! We are ND Irish fans through and through!!
Mmmmm! ENJOY!!

BUCKEYE BROWNIE COOKIES
Ingredients
1 box fudge brownie mix (19.5oz or family size)
1/4 cup butter, melted
4 oz (1/2 block) cream cheese, softened
1 egg
1 cup powdered sugar
1 cup creamy peanut butter
4 oz chocolate Candiquik
Directions
Heat oven to 350 degrees. In a medium bowl, beat the brownie mix, butter, cream cheese, and egg. The dough will be a little sticky. Scoop the dough onto an ungreased cookie sheet, making about 24 cookies. Smooth the edges of each to form a round cookie.

In a separate bowl, mix the powdered sugar and the peanut butter until it is completely combined. Form the mixture into about 1 inch balls. Make sure you have one ball for each cookie. Set aside
Bake for the cookie dough 12 minutes, keeping an eye out to make sure the cookies doesn't over cook or not be cooked enough.

As soon as the cookies come out of the oven, press a peanut butter ball lightly into the center of each cookie. The peanut butter mixture will soften slightly, but that is OK. Let the cookies cool for 5 minutes, then transfer them to a wire rack to cool completely

Melt the 4 blocks of chocolate in a microwavable bowl for 45 seconds. Stir the chocolate and melt for additional 15 seconds or until the chocolate is completely melted. (Candiquik comes in 16 ounce packages. When you open it, there are 16 blocks. Cut off 4 of these blocks for this recipe.) Spoon about ½ a tablespoon of melted chocolate on top of each cookie so it covers the peanut butter ball. Let the chocolate set. Store in an airtight container.



 Onto this baby which includes yummy hot chocolate...oh and Bailey's!! WINNING!!


 BUCKEYE COCKTAIL
Ingredients
2 packets hot chocolate mix

12 oz. hot water
2 oz. Bailey's or Bourbon
1 tsp. melted peanut butter, plus more to drizzle on top
  • whipped cream

Directions

  1. Pour hot chocolate packets into cup and stir in hot water. Add liquor. Add in peanut butter. (melt the peanut butter for 30 seconds in the microwave, so it's easier to blend)
  2. Top each cup with whipped cream. Drizzle with additional melted peanut butter if you're feeling fancy.
