I sure do love chicken soup but rarely make it because I leave it up to my mama who makes the best. However, this last weekend was so rainy and dreary and we just wanted some soup to soothe the soul. I decided I wanted to cook it in the crockpot and it was perfect timing as my dear friend Carlee from Cooking with Carlee, is hosting Crocktober with a Link-Up of all kinds of Crock-Pot and slow cooker recipes. and this whole week she is showcasing Choctoberfest...all chocolate recipes!
I love soup so much so my love of soup bowls goes hand in hand with that. I almost forgot about these soup bowls I got a few years ago from Amazon as they are so pretty for Fall. This time of year gives me all the soup feels although, if I'm being honest, I could eat soup all year round. Mr. Nine does not like noodles so our youngest and I gobbled this up, but you could...gasp...make this without noddles. I'm not a huge fan either but I do like a few

This Soulful Chicken Soup really did soothe our souls and it made just enough for me to take a couple bowls of it to work and return the favor by sharing some with my mom.
SOULFUL CHICKEN SOUP
Ingredients
2-3 pounds bone-in chicken (I used 2 thighs & 2 breasts)
3 medium carrots, cut in rounds
2 cups celery cut in 1/2 inch pieces
2 teaspoons minced garlic
2 Tablespoons good chicken base
1 bay leaf
1 1/2 teaspoons salt
1 teaspoon black pepper
6 cups chicken broth
2 cups water
2 cups wide egg noodles
3 Tablespoons finely chopped parsley
1/2 Tablespoon fresh lemon juice
Directions
Place chicken and all the ingredients except noodles, parsley and lemon juice in a 6 quart slow cooker. Cover and cook on Low for 6 hours or until chicken is very tender and starts to separate from the bone. Remove the chicken, dice or shred and return the meat to the slow cooker. Stir in the noodles and parsley. Cover and cook on High for 20 minutes or until noodles are tender. Stir in the parsley and lemon juice. Serve immediately and garnish with leftover parsley.

Oh my goodness this looks and sounds so delicious! I'm such a fan of soup, but Chris doesn't like to eat it when it's hot outside. But I think that I could convince him to try this out, even if it's a little warm out!

ReplyDeleteThis recipe certainly looks my kind of favourite soup. I'm going to save it and try it out next time I have chicken in the house (we only have chicken once every few weeks as we tend eat mostly vegetarian based meals these days!).
