This recipe was adapted from Bob, one
of the trainers on the Biggest Loser. A few summers ago, my husband and I were
itching to lose a few pounds and my husband read Bob's book. It had some great
recipes in it and the one for turkey meatballs sounded delicious.

I have adapted
it a little bit but these meatballs are a staple in our household. I will often
make a double batch and freeze them.
The different ways we like to eat them are
just plain with salt on them, with Marinara and a little cheese, over pasta or
they are terrific as meatball sandwiches.
I remember my mom frying meatballs
growing up and I would stand over the kitchen counter, salt them and eat them
right then and there fresh from the skillet. I do the same with these so you
can bet every batch is missing a couple that have gone in my mouth.
I use just a tiny bit of olive oil to fry them in and of course always made with ground turkey but I'm sure you could substitute ground sirloin and I've even tried ground chicken.
What you'll need
OUR FAVORITE
TURKEY MEATBALLS
Ingredients
1 pound ground turkey
1/2 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon ground pepper
1 teaspoon dried oregano
1 Tablespoon dried parsley
1 teaspoon dry beef bouillon
3 teaspoons garlic
2 eggs
1/4 cup italian bread crumbs
1/4 cup grated Parmesan cheese
Marinaria of your choice
Directions
Mix all the ingredients together
well. I usually take off my rings and mix with my hands and then
roll them into 1 1/2-2 inch balls. Heat a ½” layer of olive oil on medium
high in a large skillet and brown meatballs on each side, about 5-8 minutes
each side until done through. Transfer to paper towel lined plate and
sprinkle with more salt. Eat plain or with marinara and some shredded
parm or mozzarella and maybe your favorite pasta.

I love meatballs! I lived off of meatballs with sauce, cheese, & a little pasta one year i& I would have him bring home the leftover meatballs at the end of his shift so I could eat those too ha.

ReplyDeleteYum! I've never made meatballs because I've been too intimidated, but this seems manageable. I always wanted to be Italian when I was a little kid- I grew up around Italian families and I was always so jealous that they got to eat yummier pasta and breads than I had at my house!

Meatballs are a staple in house -- I love making a big batch to have with spaghetti or meatballs sandwiches. Our recipes are so similar, but I need to try using turkey! I usually add a little Italian sausage to give it some spice too. Now you have me wanting meatballs! Happy Tuesday, Andrea!

ReplyDeleteLooks like a wonderful recipe! I just batch cooked a lot of beef meatballs for the freezer. We like them with marinara, and also meatball sandwiches, with a beef gravy or even sweet and sour sauce. I'm saving this recipe to try it with turkey!

ReplyDeleteYUM YUM YUM! I had turkey meatballs with zoodles last night, but I cheated and used the frozen ones from Trader Joes. I am sure these are better. I will have to make them soon to make sure...and maybe use real noodles this time and cheat in that way!

ReplyDeleteMy kind of recipe! Much prefer cooking with ground turkey instead of beef. Less oily and just as tasty with the right seasonings. We've done our fair share of turkey meatloaf and turkey burgers but never meatballs so I'll have to try that next.
