I love to experiment with new recipes and even give them a whirl if there are boo coo ingredients and challenging steps. However, there is just something so glorious about a recipe with ingredients you can count on one hand. I get a certain kind of kitchen satisfaction about only using a few ingredients and the dish still coming out tasty as can be. Yum
My 5 Ingredient Chicken and Pasta has had the most views of all my recipes on YUMMLY so others must love simple dishes as much as I do. I am happy to say this dish has just 4 ingredients and simple directions!!! Many of you may have heard of this one but I use a different dressing than the original called for and cut back on calories with the light version and sugar free jam. We like the flavor so much better. Leftovers taste even better and it's a go to when I'm short onetime. I make sure to keep the ingredients on hand so it can be whipped together as quickly possible in a pinch.
What you'll need
4 INGREDIENT APRICOT CHICKEN
INGREDIENTS
3-4 large chicken breast, cut in large pieces
10 oz Lite Catalina Dressing
1 cup apricot jam, I use sugar free
1 envelope dry onion soup mix
DIRECTIONS
Preheat the oven to 350 degrees. Place cut up chicken in a 8x8 baking dish. In a large Pyrex glass measuring cup or bowl, combine dressing, jam and soup mix and pour over chicken. Cover and bake for an hour. Remove from oven, Let sit about 15 min. after baking. We serve this over brown rice with egg rolls.
With the sauce poured over before it gets covered and goes in to the oven.
We just love the little mini egg rolls and pretty tasty to dip in the saucy goodness!

ReplyDeleteThis sounds so easy and delicious!!! I need to start liking chicken again. Every since I got pregnant I have been like nope...pass to any chicken dish haha. I make a kielbasa recipe that uses the apricot jam so it would be nice to have a double purpose for it :)
