Here you go friends, another hearty and super easy meal. Well, because that's how I roll. At least, in the kitchen. I spared you all this week and did not post a sweet, dense dessert. Instead, this is one of my favorite recipes and great to impress company. What I love is that it can be a "2 For" type meal. You can do the pork in the crock and then have pork sandwiches. Put the rest in the fridge, and have these amazing BBQ stuffed potatoes for another meal. The BBQ is like Italian food, it gets better as it sits.

BBQ PULLED PORK
1 3-4lb pork butt or shoulder roast
1-2
teaspoons minced garlic
1-2
Tablespoons light brown sugar
1-2
Tablespoons soy sauce
2-3
cups apple juice
Your favorite BBQ sauce (we like Sweet Baby Rays)
Place roast
in the crock pot. Top with garlic and on top of that, pat the brown sugar, carefully pour the soy
sauce over that satiating the brown sugar. Then pour the apple juice around the
roast, as to not run the topping down the sides of the roast. Cook on low for 8
hours. Cool roast and shred. Add some of the juice and your favorite BBQ sauce.
Save for later or use on top your potatoes as for this recipe
BBQ PORK STUFFED POTATOES
A large
russet potato per person
A bowl full of the pulled pork
ButterGreen onions, chopped
Shredded Colby jack cheese
Sour cream
More BBQ sauce if desired
Bake your potatoes as directed. Split and fill with butter, sour cream, pork, the cheese and top with green onion and more BBQ sauce. Enjoy this heart, fill your tummy meal!!

DeleteI love BBQ stuffed potatoes! I do sweet potatoes with BBQ chicken at least once or twice per month!!! You are fancy though! Normally I just throw some chicken in the crock pot with BBQ sauce, sometimes some red peppers and call it a day!
