You guessed it.....Food!! I absolutely love to cook, bake and create in the kitchen!
So much for an insightful, blissful blurb today.......I made these two recipes for my family
and they were a huge a hit!!

CHICKEN ALFREDO LASAGNA |
CHICKEN ALFREDO LASAGNA
3-4 boneless, skinless chicken breasts (cut into small pieces)
1/2 cup lite Italian dressing
1 pkg. no boil lasagna noodles
1 (8oz) pkg. sliced mushrooms
1 (15 oz) jar Alfredo sauce (I like Classico, but any will do)
1/2 cup milk, I use skim
1/4 tsp. ground, black pepper
Olive Oil
1/2 cup onion, finely chopped
3 cups shredded mozzarella or Italian Blend cheese
Parmesan Cheese, grated
Oregano
Preheat oven to 350 degrees. In a large bowl, marinate the chicken in the Italian dressing for about 20 minutes. In a large saucepan, pour 1-2 Tbsp.olive oil and saute onion and mushrooms until soft, add jar of Alfredo sauce, milk and pepper. Keep on a low simmer. In a large skillet, pour chicken, marinade and all and cook over medium, high heat until all the dressing is evaporated and the chicken starts to brown and caramelize. Add chicken to the Alfredo mixture. IN a 8 1/2 x 11 or 9 x 13 inch baking dish, spread a ladle of the sauce. Next, add 3 lasagna noodles, then 1 cup cheese, Parmesan cheese and oregano. Add some sauce. Repeat layer. Add 3 more lasagna noodles, top with cheeses and sprinkle with oregano on top. Cover with aluminum foil and bake for 25 minutes. Remove the foil, and continue to cook until cheese is melted, about 10 minutes. Remove from allow and allow to sand 15 minutes before slicing. Serve with garlic bread and a salad. Enjoy!

Oh SWEETS, how I love them. However, they cannot be just any ole' sugary concoction, they must be amazing and primarily homemade or why waste the calories? These No Bake Oatmeal Chocolate Peanut Butter Bars are indeed worth it. And, the fact that there is no white sugar or white flour......Bonus!!!! Be careful, you cannot eat just
one! The men in my household...and ME, are pro

OATMEAL PEANUT BUTTER NO BAKE BARS
1 cup peanut butter
2/3 cup honey
1/2 cup coconut oil (no substitutes, it's what makes it so creamy)
2 cups old fashioned oats (not instant)
1 1/4 cups mini semi-sweet chocolate chips
1 teaspoon vanilla
In medium saucepan, melt together peanut butter, honey and coconut oil. Remove from heat, add oats, chocolate chips and vanilla. Stir until chips are melted. Spread into a greased 9 x 13 or 8 1/2 x 11 pan. Refrigerate until firm, cut into bars, store in the refrigerator. These melt easy and really do taste best right from the fridge. Enjoy!
