PUMPKIN SPICED FUDGE


I am a fudge connoisseur. I love a good little piece of fudge. My love of fudge began years ago when every Fall, my mom would make her famous White Fudge, sometimes it would turn out perfect; other times it would not and we'd be eating it out of the pan with a spoon. That's the thing with fudge, it doesn't always turn out, that's why the key word with fudge making is patience!! When she makes it now, it is so special and I covet every bite. This pumpkin spiced fudge is another Fair sweepstakes winner and I love that it makes a lot for gift giving. I love cutting these into little cubes and just a small piece completely satisfies that Fall treat craving! Yum




PUMPKIN SPICED FUDGE

INGREDIENTS 
1 3/4 cup white sugar
1 cup packed light brown sugar
1 1/2 sticks butter
2/3 cup (5oz) evaporated milk, I use 2%
1/2 cup 100% pure pumpkin
2 teaspoons pumpkin pie spice
1 12oz package white chocolate chips
1 jar (7oz) Marshmallow cream
1/2 cup chopped pecans
2 teaspoons vanilla

DIRECTIONS
Line a 9x13 baking pan with foil and lightly spray with cooling spray. In a medium heavy saucepan, combine sugar, brown sugar, butter, evaporated milk, pumpkin and pumpkin pie spice. Bring to a full boil over medium heat, stirring constantly until your candy thermometer reaches the soft ball stage (234-240 degrees) Tip, if you don't have a candy thermometer, boil this for about 10-12 minutes then place a drop of the mixture in cold water, if it forms a soft ball, it's ready, if not boil a little longer and do again.) Remove pan from heat and quickly sit in the white chocolate chips, marshmallow cream, nuts and vanilla, stirring until smooth, about one minute. Pour into prepared baking pan. Let cool on counter for 2 hours., Cover tightly and put in refrigerator for another couple hours. To Cut, loft from pan, remove foil, cut into small squares and store in a tight container.




This fudge will last for up to 3 weeks. It makes a great gift and yummy lil treat at a get-together, Thanksgiving and Christmas. It is one of the candies I make to go on the Christmas platters I give away.



 

AUTUMN TAG



Happy Monday Pumpkins!! Hope you had a lovely and relaxing Fall weekend!!

Favorite Autumn lipstick? Anything Wine or Plums. MAC "Rebel"




Go to Autumn moisturizer?  No brainier for me, it's the glorious Dionis Spiced Pumpkin Goat Milk Lotion! It's a cozy blend of vanilla, cinnamon and powdered sugar and as lovely aromatic as you can get. Everyone says "what's that lovely smell?"



Favorite music this time of year? The Boys of Fall By Kenny Chesney and "They're creepy and they're kooky, Mysterious and spooky, They're all together ooky,The Addams Family."

Favorite Autumn movie? RUDY: Best football movie and a great uplifting story. Plus, nothing like the Notre Dame campus in the Fall!!

 

Favorite Autumn Attire? Lovely Layers: This comfy outfit here, a light flannel, long cardigan, leggings and boots.



Favorite place to be? Another two way tie: Football Stadium or Northern Lake Michigan Shore.




Favorite Halloween Costume? Tie: Pirate Wench or Britney Spears

FRIDAY FAVORITES

Happy Friday Beautiful Loves!! Can you believe our precious October is halfway over? Another BIG football weekend for us. I hope you get to do exactly what makes you happy this fine Fall Weekend!!

1. CHAI
I have loved Chai for years. Back in the day it was simply a tea I drank. Now Chai spiced goodness is everywhere. Here are some of my favorites.
2 ounces Oringinal Baileys Irish Cream
1/2 ounce Vanilla Flavored Vodka
6 ounces hot Chai tea

Combine Irish Cream and vodka in a mig.
Top with hot Chai tea.
Garnish with whipped cream and a sprinkle of cinnamon

2. A FALL SKY 
Just look a that candy colored sky!! This is our High School football field on a glorious night. I've been seeing some gorgeous skies this Fall and I love them!!
