Me want cookies. You know I love my sweets, but not just anything sweet, it has to be pop those tastebuds with pleasure good, if I'm going cash in my calorie bank on it. To me, there is nothing better than a homemade, soft cookie. One day I was cleaning out cupboards and found in ziploc baggies, several opened baking Chips bags. I had chocolate chips, white chocolate chips, butterscotch chips and I thought, well, it's time to throw together a cookie and utilize all these. Plus I love the word "SCOTCHIES" and when there's butterscotch chips in the mix, well, it's only right I add that word to the title so Hello "3 Chip Oatmeal Scotchies."

I based this recipe off one I make at Christmastime, the Cinnamon Toffee Oatmeal Cookies. The flavors of the 3 different chips really mixes together well. I made these on a Saturday Morning and Wow, did these ever taste good with my morning coffee. I was good, I only had 3, lol.
3 CHIP OATMEAL SCOTCHIES
Ingredients:
1/2 c. brown sugar
1/2 c. brown sugar
1/2 c. white sugar
1/2 cup softened butter
1 egg
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/4 c. flour
1 1/4 c. oats, the quick oats
2/3 c. White chocolate chips
2/3 c. Milk Chocolate Chips
2/3 c. Butterscotch chips
1/2 cup softened butter
1 egg
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/4 c. flour
1 1/4 c. oats, the quick oats
2/3 c. White chocolate chips
2/3 c. Milk Chocolate Chips
2/3 c. Butterscotch chips
Directions:
Beat butter in mixer until soft. Add in sugars, eggs, and vanilla. In a separate bowl, whisk together the salt, baking powder, soda, and flour. Add to wet ingredients and mix.
Add your oats and then your chips. Drop by tablespoonfuls onto cookie sheets or a baking stone, which I prefer and have 2 of them.
Bake at 375 for 10-11 minutes! Don’t let them get too done…they are better when they are soft!
I scaled this down so it makes about 2 dozen or so cookies but you can easily double it.

I think these are my favorite! They are reminiscent of a trash can cookie (just add in heath bar, and marshmallow to the batter) and that my friend is AMAZING! But you should know that because you're amazing!
